Sipping a Trinidadian Bulldog is like eating a perfectly ripe grapefruit sprinkled with golden Demerara sugar.
And then getting kicked in the head.
This cocktail is so simple and easy to make you might think it’s nothing special.
Oh, how wrong you would be.
The devilish tastiness of these cocktails lies in the details. Please use only fresh-squeezed or—forgive me foes of pasteurization—Tropicana brand grapefruit juice.
And use Demerara—not plain old brown—sugar to make the Simple Syrup, see recipe below.
Trinidadian Bulldogs were named with my mother-in-law in mind. Because she’s from Trinidad…
The bulldog moniker is a nod to another grapefruit juice-based drink, the Salty Dog. And because next to boxer dogs, like Toby, seen working in the photo below, bulldogs are our favorite breed.
Trinidadian Bulldog Cocktail
For each Trinidadian Bulldog mix:
1/2 jigger Demerara Simple Syrup or to taste, see recipe below
1 jigger rum
6 ounces fresh or Tropicana grapefruit juice
Lime wedge and thin slices for garnish
- In a tall glass stir together simple syrup, rum and grapefruit juice.
- Fill glass with ice and squeeze lime wedge onto top of drink. Garnish with lime slice.
Demerara Simple Syrup
1 cup Demerara sugar
1 cup water
- In a saucepan mix sugar and water.
- Bring to simmer and stir until sugar dissolves. Let mixture cool. Stored in an air-tight container in the fridge, Demerara Simple Syrup will keep indefinitely.

Adorable! I love that you have an Official Recipe Taster! How did you teach him to type? Harley always confuses the “D” and the “K” keys. But I solved that by teaching him to dictate, which works better anyway since he’s always out giving speeches all the time.

To tell the truth, Kelly, Toby taught himself to type. He picked it up fast–without “paws,” as he puts it.
Dictation is an innovative solution–must compare with keyboarding.
