A twist on an old classic, this Curried Egg Salad makes delicious sandwiches—great for a light summer dinner.

Curried Egg Salad Recipe
8 hard boiled eggs, peeled
4 tablespoons mayonnaise
3 tablespoons plain yogurt
1 teaspoon curry powder
Dash cayenne pepper
Kosher salt and freshly ground pepper to taste
- In a medium bowl mash hard boiled eggs with a fork or potato masher.
- Add remaining ingredients and stir to blend. Serve immediately or cover tightly and store in refrigerator.
