Sometimes it’s the little culinary touches that make a meal special.
Rice is such a useful side dish for chicken and vegetarian dishes, soups and stews. But let’s face it, sometimes it’s a little…boring.
You can add fragrant goodness to plain old rice with just a splash of olive oil and a clove of garlic. My family loves this Easy Garlic Rice with burritos and fajitas as well as chili and black bean soup.
I’m using a brown, short grained rice for this recipe—but feel free to substitute your favorite variety.
Easy Garlic Rice Recipe
1 tablespoon olive oil
1 clove garlic, crushed
1 ½ brown or other rice
3 cups boiling water
½ teaspoon salt
- Heat olive oil in a medium-sized pot over medium flame.
- When oil is heated, add crushed garlic. Fry until softened—about 2-3 minutes—adjusting flame so garlic doesn’t burn.
- Add rice, stirring to coat rice with oil. Cook over low flame for 1-2 more minutes.
- Pour hot water and salt over rice. Stir so rice doesn’t stick together. Bring to a boil. Cover pot, turn flame to lowest level and allow rice to steam until water is absorbed and rice is tender—about 20 minutes.
Serves 6.
