Fall’s bounty presents a delightful dilemma: what to do with all those crispy apples you picked last weekend.
This salad’s mixture of apple, walnut, spinach and Lime Chutney Salad Dressing is a tasty solution. The sweet-sour dressing combines finely chopped chutney and a hint of curry powder with lime juice and garlic.
I like hearty, dark green, fully-grown spinach, but feel free to substitute baby spinach if you prefer it.
The combination of spinach, walnuts and Lime Chutney Salad Dressing adapts nicely in spring and summer with the addition of seasonal fruits—peaches are especially delish.
Spinach, Apple and Walnut Salad with Lime Chutney Salad Dressing
1 head spinach, washed well and torn into bite-sized pieces
1 apple, cored and cubed
1/3 cup raisins
1/2 cup walnuts, roughly chopped
1/3-1/2 cup Lime Chutney Salad Dressing, see recipe below
- In a salad bowl, toss first four ingredients.
- Pour dressing over salad, toss and serve.
Lime Chutney Salad Dressing Recipe
Don’t limit Lime Chutney Salad Dressing to Spinach, Apple and Walnut Salad. This tangy dressing makes any plain mesclun or mixed green salad taste special.
And it’s also great as a chicken marinade!
Lime Chutney Salad Dressing
2 tablespoons chutney—chop any chunks of fruit fine
1/2 cup sunflower oil or other mild oil—do not use olive oil for this dressing
1 clove garlic, crushed
Juice of 1 lime—about 5 tablespoons
1/2 teaspoon Madras curry powder
Mix all ingredients in a small bowl or cruet, blending well–the heavy chutney tends to settle at the bottom of the container.
Makes about 2/3 cup dressing.
